Instructions

    Boil the potatoes in salted water for about 15 minutes, then add the green peas and corn kernels and continue cooking for another 10 minutes.

    Add the chopped pumpkin leaves and cooked kidney beans to the pot and cook for 5 more minutes until the leaves are wilted and tender.

    Drain excess water, add butter and milk, and mash everything together vigorously with a wooden spoon, leaving some texture with visible beans and corn.

    Season with salt, shape into a mound on a serving plate, and serve hot alongside grilled meat, stew, or as a satisfying main dish on its own.
