A dense, sweet confection of toasted millet flour, butter, sugar, and dried fruits, pressed into shapes and served with tea.

300g millet

100g butter

100g sugar or honey

100g raisins

50g dried apricots, chopped

100ml thick cream or kurt (ground)

Pinch of salt
Instructions

Toast millet in a dry heavy skillet over medium heat, stirring constantly, until golden and fragrant, about 10 min.

Grind toasted millet in a food processor or mortar to a fine flour.

Melt butter in a pan, add the millet flour and stir to combine thoroughly.

Mix in sugar or honey, salt, dried fruits, and cream.

Press mixture firmly into molds or shape into small rectangles by hand.

Let cool and set for 1-2 hours. Serve at room temperature with tea.
