Millet Sweet

A dense, sweet confection of toasted millet flour, butter, sugar, and dried fruits, pressed into shapes and served with tea.

Ingredients

  • 300g millet
  • 100g butter
  • 100g sugar or honey
  • 100g raisins
  • 50g dried apricots, chopped
  • 100ml thick cream or kurt (ground)
  • Pinch of salt

Instructions

  1. 1 Toast millet in a dry heavy skillet over medium heat, stirring constantly, until golden and fragrant, about 10 min.
  2. 2 Grind toasted millet in a food processor or mortar to a fine flour.
  3. 3 Melt butter in a pan, add the millet flour and stir to combine thoroughly.
  4. 4 Mix in sugar or honey, salt, dried fruits, and cream.
  5. 5 Press mixture firmly into molds or shape into small rectangles by hand.
  6. 6 Let cool and set for 1-2 hours. Serve at room temperature with tea.
