A festive soup of seven ingredients prepared for Nauryz (spring equinox), combining grains, meat, and dairy in a symbolic celebration of renewal.

Ingredients

  • 300g boiled lamb or beef, shredded
  • 100g rice
  • 100g wheat berries or barley, pre-soaked
  • 500ml kefir or sour milk
  • 1.5L meat broth
  • 1 large onion, diced
  • 100g kurt (dried yogurt), dissolved in water
  • Salt and pepper
  • Fresh herbs

Instructions

  1. 1 Cook pre-soaked wheat berries in salted water until tender, about 40 min. Drain.
  2. 2 Cook rice separately until tender. Drain.
  3. 3 Bring meat broth to a simmer. Add onion and cook 5 min.
  4. 4 Add cooked grains, shredded meat, and dissolved kurt. Stir well.
  5. 5 Pour in kefir, stir gently. Heat through but do not boil.
  6. 6 Season with salt and pepper. Serve in large bowls garnished with fresh herbs.
