Buttered Grain Soup

A rustic soup of cracked wheat simmered in rich meat broth with butter and sour milk, nourishing and deeply comforting.

Ingredients

  • 200g cracked wheat or bulgur
  • 1L meat broth
  • 2 tbsp butter
  • 200ml sour cream or yogurt
  • 1 onion, diced
  • Salt and pepper
  • Fresh dill

Instructions

  1. 1 Rinse cracked wheat thoroughly.
  2. 2 Bring meat broth to a boil. Add cracked wheat and diced onion.
  3. 3 Simmer for 20-25 min until wheat is tender and has absorbed much of the liquid.
  4. 4 Stir in butter until melted and incorporated.
  5. 5 Remove from heat. Stir in sour cream or yogurt gently.
  6. 6 Serve in bowls, garnished with fresh dill and black pepper.
