Rinse cracked wheat thoroughly.

Bring meat broth to a boil. Add cracked wheat and diced onion.

Simmer for 20-25 min until wheat is tender and has absorbed much of the liquid.

Stir in butter until melted and incorporated.

The Story Behind Mai Kozhe
Mai kozhe is a peasant-origin soup that showcases the Kazakh ability to create deeply satisfying meals from minimal ingredients. Cracked wheat, one of the few grains available to semi-settled Kazakhs, combined with meat broth and dairy produced a nutritionally complete meal. The butter (mai) enrichment gave the soup its name and its calories, essential for surviving harsh winters on the steppe.
