Ingredients

  • 500g mixed fresh fish (grouper, snapper), cut into pieces
  • 2 potatoes, cubed
  • 2 carrots, sliced
  • 2 tomatoes, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 scotch bonnet pepper
  • 2 tbsp vegetable oil
  • 1 bouillon cube
  • Fresh parsley, chopped
  • Salt to taste
  • 1L water

Instructions

  1. 1 Heat oil in a pot. Sauté onion and garlic until fragrant.
  2. 2 Add tomatoes and cook until softened, about 5 minutes.
  3. 3 Add water, potatoes, carrots, bouillon, and salt. Bring to a boil and simmer 15 minutes.
  4. 4 Add fish pieces and whole scotch bonnet. Cook gently for 10 minutes until fish is flaky.
  5. 5 Garnish with fresh parsley and serve hot.
