Ginger Juice

A fiery, refreshing ginger drink made from freshly pounded ginger root, sweetened with sugar and brightened with lime — Ivory Coast's favourite natural energy drink.

Ingredients

  • 300g fresh ginger root, peeled and chopped
  • 1L water
  • 1 cup sugar
  • Juice of 3 limes
  • 1 whole pineapple, juiced (optional)
  • Ice for serving

Instructions

  1. 1 Blend ginger with 2 cups of water until very smooth.
  2. 2 Strain through a fine sieve or cheesecloth into a pitcher, pressing to extract all juice.
  3. 3 Add remaining water, sugar, and lime juice. Stir until sugar dissolves.
  4. 4 Add pineapple juice if using, for a tropical variation.
  5. 5 Chill thoroughly and serve over ice.
