A rustic, cinnamon-scented butter cake bursting with chunks of tart Bramley apples, finished with a crunchy demerara sugar crust.

Ingredients

  • 225g self-raising flour
  • 175g caster sugar
  • 115g butter, softened
  • 2 eggs
  • 100ml milk
  • 3 large Bramley apples, peeled and chunked
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tbsp demerara sugar for topping
  • Cloves (2-3, optional)

Instructions

  1. 1 Preheat oven to 180°C (350°F). Grease and line a 9-inch springform tin.
  2. 2 Cream butter and sugar until light and fluffy. Beat in eggs one at a time.
  3. 3 Fold in flour, cinnamon, and nutmeg alternately with milk.
  4. 4 Toss apple chunks in a little flour, fold into the batter.
  5. 5 Pour into tin, arrange a few apple slices on top, scatter demerara sugar.
  6. 6 Bake 45-50 min until golden and a skewer comes out clean. Serve warm with softly whipped cream.
