A velvety smooth soup of potatoes and leeks simmered in stock, finished with cream and chives — Ireland's most comforting bowl.

Ingredients

  • 4 large leeks, sliced (white and light green parts)
  • 4 medium potatoes, peeled and diced
  • 1 onion, diced
  • 30g butter
  • 1L vegetable or chicken stock
  • 150ml cream
  • Fresh chives, snipped
  • Salt and white pepper
  • Nutmeg, pinch

Instructions

  1. 1 Melt butter in a large pot. Gently sweat leeks and onion for 8 min until soft but not browned.
  2. 2 Add potatoes and stock. Bring to a boil, then simmer 20 min until potatoes are very tender.
  3. 3 Blend until silky smooth using an immersion blender.
  4. 4 Stir in cream, season with salt, white pepper, and a pinch of nutmeg.
  5. 5 Reheat gently without boiling.
  6. 6 Serve in warmed bowls with a swirl of cream and snipped chives.
