A vibrant, finely diced salad of cucumber, tomato, and onion dressed simply with lime juice, dried mint, and olive oil — the essential Persian table companion.

Ingredients

  • 4 Persian cucumbers, finely diced
  • 3 medium tomatoes, finely diced
  • 1 small red onion, finely diced
  • Juice of 3 limes
  • 2 tbsp olive oil
  • 1 tbsp dried mint
  • Salt and pepper

Instructions

  1. 1 Dice cucumbers, tomatoes, and onion into very small, uniform pieces (5mm cubes).
  2. 2 Combine all vegetables in a bowl.
  3. 3 Dress with lime juice, olive oil, dried mint, salt, and pepper.
  4. 4 Toss gently. Let sit 5 min for flavors to meld.
  5. 5 Serve immediately — shirazi salad does not keep well.
