Ingredients
4 Persian cucumbers, finely diced
3 medium tomatoes, finely diced
1 small red onion, finely diced
Juice of 3 limes
2 tbsp olive oil
1 tbsp dried mint
Salt and pepper
Instructions
1Dice cucumbers, tomatoes, and onion into very small, uniform pieces (5mm cubes).
2Combine all vegetables in a bowl.
3Dress with lime juice, olive oil, dried mint, salt, and pepper.
4Toss gently. Let sit 5 min for flavors to meld.
5Serve immediately — shirazi salad does not keep well.
