Herb Rice with Fish

Fragrant green herb-flecked rice paired with pan-fried white fish seasoned with turmeric and lemon, the traditional Nowruz dinner served on New Year's Eve.

Ingredients

  • 3 cups basmati rice, soaked
  • 4 white fish fillets (sea bass or trout)
  • 1 cup chopped fresh parsley
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup chopped fresh dill
  • 1/4 cup chopped fresh chives
  • 1/4 cup chopped fresh fenugreek
  • 1 tsp turmeric
  • Juice of 1 lemon
  • 3 tbsp oil
  • 2 tbsp butter
  • Salt and pepper

Instructions

  1. 1 Parboil rice until just al dente. Drain.
  2. 2 Mix herbs together. Layer rice and herb mixture alternately in a buttered pot.
  3. 3 Add 2 tbsp oil and 2 tbsp water to the bottom for tahdig. Cover tightly, steam on low 45 min.
  4. 4 Season fish with turmeric, salt, pepper, and lemon juice.
  5. 5 Pan-fry fish in oil until golden and crispy on both sides, about 4 min per side.
  6. 6 Serve herb rice with fish on top and tahdig on the side.
