The Story Behind لوبیا پلو
Lubia polo represents the accessible, everyday side of Persian cuisine — a one-pot family meal that requires no exotic ingredients but still delivers the layered tahdig that defines Iranian rice cookery. Green beans arrived in Iran via trade routes from the Americas, and quickly became incorporated into the polo tradition.
