Rosewater Vermicelli Sorbet

A delicate frozen dessert of thin rice noodles frozen in a rosewater and lime syrup, served semi-frozen with a drizzle of sour cherry syrup.

Ingredients

  • 200g thin rice vermicelli noodles
  • 2 cups sugar
  • 3 cups water
  • 3 tbsp rosewater
  • Juice of 2 limes
  • Sour cherry syrup (sharbat-e albaloo) for serving
  • Fresh lime wedges

Instructions

  1. 1 Cook rice noodles until soft. Drain and cut into 3cm lengths.
  2. 2 Make syrup: dissolve sugar in water over heat. Add rosewater and lime juice. Cool.
  3. 3 Combine noodles with syrup in a shallow container.
  4. 4 Freeze 3-4 hours, stirring with a fork every hour to create icy crystals.
  5. 5 Serve semi-frozen in bowls, drizzled with sour cherry syrup and a squeeze of lime.
