Cook rice noodles until soft. Drain and cut into 3cm lengths.

Faloodeh dates to at least 400 BCE, making it arguably the world's oldest frozen dessert. Ancient Persians stored mountain ice in yakhchals (ice houses) to serve faloodeh year-round. The city of Shiraz remains its spiritual home, where faloodeh shops line every street. The combination of icy sweetness with tart cherry syrup is uniquely Persian.
