Thin, delicate Icelandic crepes rolled with sugar, jam, or whipped cream. A beloved dessert and snack passed down through generations.

Ingredients

  • 300g all-purpose flour
  • 3 eggs
  • 500ml milk
  • 2 tbsp melted butter
  • 1 tbsp sugar
  • 1/2 tsp baking powder
  • Pinch of salt
  • Butter for cooking
  • Sugar, rhubarb jam, or whipped cream for filling

Instructions

  1. 1 Whisk eggs and milk together. Add melted butter.
  2. 2 Mix flour, sugar, baking powder, and salt. Add to wet ingredients and whisk until smooth. Rest 15 minutes.
  3. 3 Heat a crepe pan over medium heat and brush with butter.
  4. 4 Pour a thin layer of batter and tilt to coat the pan evenly.
  5. 5 Cook for 1-2 minutes until the bottom is golden. Flip and cook 30 seconds more.
  6. 6 Spread with sugar, jam, or whipped cream. Roll up and serve immediately.
