Whole fried snapper seasoned with garlic and lime, served with coconut rice, fried plantains, and a fresh cabbage salad. A Caribbean coast Honduran classic.

Ingredients

  • 2 whole red snappers, scaled and scored
  • 6 cloves garlic, minced
  • Juice of 3 limes
  • 1 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 cups cooked coconut rice
  • 2 ripe plantains, sliced and fried
  • 2 cups shredded cabbage
  • Vegetable oil for frying
  • Salt and pepper

Instructions

  1. 1 Clean fish with lime juice and salt, then rub inside and out with minced garlic, lime juice, salt, and pepper. Marinate twenty minutes.
  2. 2 Mix flour with garlic powder, paprika, salt, and pepper. Dredge fish thoroughly in the seasoned flour.
  3. 3 Fry in hot oil, carefully turning once, until golden and crispy on both sides, about six minutes per side. The fish should be cooked through and flaky.
  4. 4 While fish fries, prepare coconut rice and fry plantain slices until golden.
  5. 5 Serve whole fried fish on a platter with coconut rice, fried plantains, and a simple cabbage salad dressed with lime juice.
