Ingredients
4 ripe tomatoes, finely diced
1 white onion, finely diced
1/2 cup fresh cilantro, chopped
1 green bell pepper, finely diced
Juice of 2 limes
Salt to taste
1 jalapeno, minced (optional)
Instructions
1Dice tomatoes, onion, and bell pepper into small, uniform pieces.
2Combine all diced vegetables in a bowl with chopped cilantro.
3Squeeze lime juice over the mixture and add salt to taste. Add minced jalapeno if desired.
4Stir gently and let sit five minutes for flavors to meld. Serve fresh at room temperature.
