A tangy, spicy table sauce made from tomatoes, onions, Scotch bonnet peppers, lime juice, and herbs. The essential Haitian condiment for fried foods and grilled meats.
Ingredients
4 tomatoes, finely diced
1 onion, finely diced
1 Scotch bonnet pepper, minced
1 green bell pepper, finely diced
3 cloves garlic, minced
Juice of 2 limes
2 tbsp tomato paste
2 tbsp vegetable oil
2 tbsp fresh parsley, chopped
Salt and black pepper
125ml water
Instructions
1Heat oil in a saucepan over medium heat. Add onion, bell pepper, and garlic. Cook until softened.
2Add tomato paste and cook two minutes until darkened and fragrant.
3Add diced tomatoes, Scotch bonnet, and water. Simmer for ten minutes until tomatoes break down.
4Add lime juice and parsley. Stir well and season with salt and pepper.
5Cook two more minutes, then remove from heat. Sauce should be chunky but saucy.
6Serve warm or at room temperature alongside fried foods, grilled meats, or rice dishes.
