A tangy, spicy table sauce made from tomatoes, onions, Scotch bonnet peppers, lime juice, and herbs. The essential Haitian condiment for fried foods and grilled meats.

Ingredients

  • 4 tomatoes, finely diced
  • 1 onion, finely diced
  • 1 Scotch bonnet pepper, minced
  • 1 green bell pepper, finely diced
  • 3 cloves garlic, minced
  • Juice of 2 limes
  • 2 tbsp tomato paste
  • 2 tbsp vegetable oil
  • 2 tbsp fresh parsley, chopped
  • Salt and black pepper
  • 125ml water

Instructions

  1. 1 Heat oil in a saucepan over medium heat. Add onion, bell pepper, and garlic. Cook until softened.
  2. 2 Add tomato paste and cook two minutes until darkened and fragrant.
  3. 3 Add diced tomatoes, Scotch bonnet, and water. Simmer for ten minutes until tomatoes break down.
  4. 4 Add lime juice and parsley. Stir well and season with salt and pepper.
  5. 5 Cook two more minutes, then remove from heat. Sauce should be chunky but saucy.
  6. 6 Serve warm or at room temperature alongside fried foods, grilled meats, or rice dishes.
