Plantain Porridge

A creamy, comforting breakfast porridge made from ripe plantains blended with milk, cinnamon, nutmeg, and vanilla. Haiti's favorite morning meal.

Ingredients

  • 3 very ripe plantains, peeled
  • 500ml whole milk
  • 250ml coconut milk
  • 100g sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • Pinch of salt
  • 2 tbsp butter
  • 250ml water

Instructions

  1. 1 Cut plantains into chunks. Blend with water until smooth.
  2. 2 Pour plantain mixture into a heavy saucepan over medium heat. Stir constantly to prevent sticking.
  3. 3 Add milk, coconut milk, sugar, vanilla, cinnamon, nutmeg, and salt. Whisk to combine.
  4. 4 Continue stirring over medium-low heat for fifteen minutes until mixture thickens to a porridge consistency.
  5. 5 Add butter and stir until melted and incorporated. Adjust sweetness to taste.
  6. 6 Serve warm in cups or bowls. Can be enjoyed thick or thinned with additional milk.
