A creamy, comforting breakfast porridge made from ripe plantains blended with milk, cinnamon, nutmeg, and vanilla. Haiti's favorite morning meal.
Ingredients
3 very ripe plantains, peeled
500ml whole milk
250ml coconut milk
100g sugar
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp ground nutmeg
Pinch of salt
2 tbsp butter
250ml water
Instructions
1Cut plantains into chunks. Blend with water until smooth.
2Pour plantain mixture into a heavy saucepan over medium heat. Stir constantly to prevent sticking.
3Add milk, coconut milk, sugar, vanilla, cinnamon, nutmeg, and salt. Whisk to combine.
4Continue stirring over medium-low heat for fifteen minutes until mixture thickens to a porridge consistency.
5Add butter and stir until melted and incorporated. Adjust sweetness to taste.
6Serve warm in cups or bowls. Can be enjoyed thick or thinned with additional milk.
