Guyanese Fried Rice

Chinese-Guyanese Stir-Fried Rice

Day-old rice stir-fried with soy sauce, vegetables, scrambled egg, and chicken, seasoned with the quintessential Guyanese wiri wiri pepper.

Ingredients

  • 4 cups day-old cooked rice
  • 200g chicken breast, diced
  • 2 eggs, beaten
  • 1 cup mixed vegetables, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 wiri wiri pepper, minced
  • 2 stalks scallion, sliced
  • 2 tbsp vegetable oil
  • 1 tsp sesame oil

Instructions

  1. 1 Heat vegetable oil in a wok over very high heat. Add chicken and stir-fry until cooked through, about three minutes. Remove.
  2. 2 Add beaten eggs to the wok and scramble quickly until just set. Break into small pieces with spatula.
  3. 3 Add garlic, onion, and wiri wiri pepper. Stir-fry thirty seconds until fragrant.
  4. 4 Add day-old rice, breaking up any clumps. Stir-fry two minutes, pressing rice against the wok for slight charring.
  5. 5 Add soy sauce, oyster sauce, mixed vegetables, and cooked chicken. Toss everything together for two minutes.
  6. 6 Finish with sesame oil and scallion. Serve immediately while the rice is hot and slightly smoky.
