Flaky turmeric-colored pastry filled with seasoned ground beef, onions, and hot pepper, baked until golden and served as a hearty snack.

Ingredients

  • 500g ground beef
  • 2 cups flour
  • 100g cold butter, cubed
  • 1 tsp turmeric
  • 1 egg yolk
  • Cold water
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 1 wiri wiri pepper, minced
  • 1 tsp cumin
  • 1 tbsp curry powder
  • 2 tbsp breadcrumbs
  • Salt and black pepper
  • 2 tbsp vegetable oil

Instructions

  1. 1 Make pastry by rubbing cold butter into flour and turmeric until it resembles breadcrumbs. Add egg yolk and enough cold water to form dough. Chill thirty minutes.
  2. 2 Brown ground beef in oil with onion, garlic, cumin, curry powder, and wiri wiri pepper until fully cooked and dry.
  3. 3 Stir breadcrumbs into the beef mixture to absorb excess moisture. Season well with salt and pepper. Cool completely.
  4. 4 Roll pastry thin and cut into six-inch circles. Place filling on one half, fold over, and crimp edges with a fork.
  5. 5 Brush tops with beaten egg for a golden finish. Place on a lined baking sheet.
  6. 6 Bake at 200C for twenty-five minutes until pastry is golden, flaky, and crisp. Cool five minutes before serving.
