A smooth, firm cornmeal porridge stirred to perfection and served as the ideal vehicle for Guinea's rich sauces and stews.

Ingredients

  • 2 cups fine cornmeal
  • 4 cups water
  • 1/2 tsp salt

Instructions

  1. 1 Bring water and salt to a rolling boil.
  2. 2 Gradually sprinkle in cornmeal while stirring vigorously with a wooden spoon.
  3. 3 Reduce heat to low and continue stirring for 15-20 minutes.
  4. 4 The mixture should become very thick, smooth, and pull away from the pot sides.
  5. 5 Wet a bowl, scoop tô into it, and press to form a smooth dome. Serve with sauce.
