A nutritious green sauce made from tender sweet potato leaves cooked with groundnuts and palm oil, a staple in Guinea's forest region.

Ingredients

  • 500g sweet potato leaves, washed and chopped
  • 200g smoked fish, deboned
  • 1/2 cup groundnut paste
  • 1/4 cup palm oil
  • 1 onion, chopped
  • 2 scotch bonnet peppers
  • 1 bouillon cube
  • Salt to taste
  • 500ml water

Instructions

  1. 1 Boil sweet potato leaves in salted water for 10 minutes. Drain.
  2. 2 Heat palm oil and sauté onion until soft.
  3. 3 Add groundnut paste and stir for 5 minutes.
  4. 4 Add smoked fish, peppers, bouillon cube, and water.
  5. 5 Add cooked leaves and simmer for 25 minutes until thick. Serve with rice.
