Guinea's aromatic one-pot rice dish cooked with tomatoes, onions, carrots, and seasoned chicken, flavored with garlic and bay leaves for a satisfying weekday meal.

Ingredients

  • 3 cups long-grain rice
  • 500g chicken pieces
  • 3 tomatoes, chopped
  • 2 onions, sliced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 2 bay leaves
  • 3 tbsp vegetable oil
  • 2 bouillon cubes
  • Salt and pepper to taste
  • 4 cups water

Instructions

  1. 1 Season and brown chicken pieces in oil. Remove and set aside.
  2. 2 Sauté onions and garlic until fragrant. Add tomatoes and cook until soft.
  3. 3 Add carrots, bay leaves, and bouillon cubes.
  4. 4 Rinse rice and add to pot with water and browned chicken.
  5. 5 Cover and cook on low heat for 25 minutes until rice is fluffy and liquid absorbed.
  6. 6 Fluff with a fork, remove bay leaves, and serve.
