Ingredients

  • 1 cup fonio grain
  • 3 cups water
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • Zest of 1 lime
  • Pinch of salt

Instructions

  1. 1 Wash fonio thoroughly in a fine sieve.
  2. 2 Bring water to a boil, add fonio and salt.
  3. 3 Stir continuously for 5 minutes until smooth and thick.
  4. 4 Add sugar, vanilla, and lime zest. Cook 3 more minutes.
  5. 5 Serve warm in bowls.
