Ingredients

  • 500g chicken pieces (thighs or drumsticks)
  • 1 cup long-grain rice
  • 1 large onion, quartered
  • 3 cloves garlic, smashed
  • 2-inch piece fresh ginger, sliced
  • Juice of 1 lime
  • 1 carrot, diced
  • 1.5L water
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. 1 Place chicken, onion, garlic, ginger, and carrot in a large pot with water and salt.
  2. 2 Bring to a boil, then reduce heat and simmer for 30 minutes until chicken is cooked through.
