Sweet, golden-fried fritters of mashed ripe plantain and coconut, crisp outside and soft inside — a beloved Guinea-Bissauan dessert and snack.

Ingredients

  • 4 very ripe plantains, mashed
  • 3 tbsp grated fresh coconut
  • 2 tbsp sugar
  • 1 pinch salt
  • 1 tsp cinnamon
  • Vegetable oil for frying

Instructions

  1. 1 Mash plantains thoroughly until smooth with no lumps.
  2. 2 Mix in grated coconut, sugar, salt, and cinnamon.
  3. 3 Form mixture into small balls or flat rounds.
  4. 4 Heat oil to 170°C (340°F).
  5. 5 Fry fritters in batches until deep golden brown, about 3-4 minutes per side.
  6. 6 Drain on paper towels. Serve warm, dusted with extra cinnamon if desired.
