Guatemala's iconic late-night street food — a long bread roll stuffed with grilled beef sausage, guacamole, cabbage slaw, mustard, mayo, and hot sauce.

Ingredients

  • 4 long bread rolls (pan francés)
  • 4 beef sausages (longaniza de res)
  • 1 cup guacamole
  • 1 cup shredded cabbage
  • Mustard
  • Mayonnaise
  • Hot sauce
  • 1 cup refried black beans (optional)

Instructions

  1. 1 Grill or pan-fry beef sausages until cooked through and slightly charred.
  2. 2 Split bread rolls lengthwise and toast lightly on the grill.
  3. 3 Spread refried black beans on one side of the roll if desired.
  4. 4 Place the grilled sausage in the roll.
  5. 5 Top generously with guacamole, shredded cabbage, mustard, mayo, and hot sauce.
  6. 6 Serve immediately, wrapped in paper for easy eating.
