Guatemala's iconic late-night street food — a long bread roll stuffed with grilled beef sausage, guacamole, cabbage slaw, mustard, mayo, and hot sauce.
Ingredients
4 long bread rolls (pan francés)
4 beef sausages (longaniza de res)
1 cup guacamole
1 cup shredded cabbage
Mustard
Mayonnaise
Hot sauce
1 cup refried black beans (optional)
Instructions
1Grill or pan-fry beef sausages until cooked through and slightly charred.
2Split bread rolls lengthwise and toast lightly on the grill.
3Spread refried black beans on one side of the roll if desired.
4Place the grilled sausage in the roll.
5Top generously with guacamole, shredded cabbage, mustard, mayo, and hot sauce.
6Serve immediately, wrapped in paper for easy eating.
