Stuffed Plantain Ovals

Smooth mashed ripe plantain shaped into ovals and stuffed with sweetened black bean paste, then fried until golden and dusted with sugar and cinnamon.

Ingredients

  • 4 very ripe plantains
  • 1 cup refried black beans, sweetened with 2 tbsp sugar
  • 1/2 cup chocolate chips (optional)
  • Vegetable oil for frying
  • Cinnamon sugar for dusting
  • Pinch of salt

Instructions

  1. 1 Boil plantains in their skins until very soft, about 20 min. Peel and mash until smooth.
  2. 2 Add a pinch of salt to the mashed plantain. Let cool until handleable.
  3. 3 Take a portion of plantain, flatten in your palm, place a spoonful of sweet black bean filling in the center.
  4. 4 Fold plantain around the filling, shaping into a smooth oval. Seal edges.
  5. 5 Fry in oil at 175°C until golden brown on all sides, about 3 min.
  6. 6 Drain on paper towels and dust with cinnamon sugar while warm.
