Silky-smooth black beans mashed and fried with onion until thick enough to hold a spoon upright, the foundation of every Guatemalan breakfast plate.

Ingredients

  • 3 cups cooked black beans with their liquid
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp vegetable oil
  • Salt to taste

Instructions

  1. 1 Heat oil in a heavy skillet over medium heat. Sauté onion and garlic until golden.
  2. 2 Add cooked beans with their liquid. Mash with a potato masher, leaving some texture.
  3. 3 Cook over medium heat, stirring frequently, for 15-20 min until thick and the beans pull away from the pan.
  4. 4 The beans are ready when you can "flip" them — volteados means "flipped."
  5. 5 Season with salt. Serve hot as a side or spread on tortillas.
