Heat oil in a heavy skillet over medium heat. Sauté onion and garlic until golden.

Add cooked beans with their liquid. Mash with a potato masher, leaving some texture.

Cook over medium heat, stirring frequently, for 15-20 min until thick and the beans pull away from the pan.

The beans are ready when you can "flip" them — volteados means "flipped."
