Crispy, golden fritters of flaked salt cod mixed with herbs, onions, and hot pepper, deep-fried until crunchy outside and fluffy inside, the ultimate Grenadian snack.

Ingredients

  • 300g salt cod, soaked and flaked
  • 1.5 cups flour
  • 1 tsp baking powder
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 1 Scotch bonnet pepper, minced
  • 2 stalks chive, chopped
  • Fresh thyme leaves
  • Black pepper
  • Water to make batter
  • Oil for deep frying

Instructions

  1. 1 Soak salt cod overnight, boil for fifteen minutes, then drain and flake finely, removing any bones.
  2. 2 Combine flour, baking powder, and enough water to make a thick batter that drops from a spoon.
  3. 3 Add flaked fish, onion, garlic, Scotch bonnet, chive, thyme, and black pepper. Mix well.
  4. 4 Heat oil to 175 degrees Celsius in a deep pot or fryer.
  5. 5 Drop tablespoons of the mixture into hot oil and fry until golden brown and crispy, about four minutes.
  6. 6 Drain on paper towels and serve hot with pepper sauce.
