Ingredients
300g salt cod, soaked and flaked
1.5 cups flour
1 tsp baking powder
1 onion, finely diced
2 cloves garlic, minced
1 Scotch bonnet pepper, minced
2 stalks chive, chopped
Fresh thyme leaves
Black pepper
Water to make batter
Oil for deep frying
Instructions
1Soak salt cod overnight, boil for fifteen minutes, then drain and flake finely, removing any bones.
2Combine flour, baking powder, and enough water to make a thick batter that drops from a spoon.
3Add flaked fish, onion, garlic, Scotch bonnet, chive, thyme, and black pepper. Mix well.
4Heat oil to 175 degrees Celsius in a deep pot or fryer.
5Drop tablespoons of the mixture into hot oil and fry until golden brown and crispy, about four minutes.
6Drain on paper towels and serve hot with pepper sauce.
