A rustic salad of ripe tomatoes, crisp cucumbers, red onions, Kalamata olives, and green peppers crowned with a thick slab of feta, all dressed in olive oil and oregano.
Ingredients
4 ripe tomatoes, cut into wedges
1 large cucumber, thickly sliced
1 red onion, thinly sliced
1 green bell pepper, sliced
150g Kalamata olives
200g block feta cheese
4 tbsp extra-virgin olive oil
1 tsp dried oregano
Salt
Capers (optional)
Instructions
1Cut tomatoes into thick wedges and cucumber into half-moon slices. Place in a large bowl.
2Add thinly sliced red onion rings and green pepper slices to the bowl.
3Scatter Kalamata olives over the vegetables.
4Place the entire block of feta on top — never crumble it in a true horiatiki.
5Drizzle generously with olive oil, sprinkle with dried oregano and salt. Serve immediately without tossing.
