Shrimp Saganaki

Plump shrimp baked in a bubbling tomato sauce with crumbled feta, ouzo, and fresh herbs, served sizzling in the pan with crusty bread for dipping.

Ingredients

  • 500g large shrimp, peeled and deveined
  • 400g canned crushed tomatoes
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 150g feta cheese, crumbled
  • 2 tbsp ouzo
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • Fresh parsley, chopped
  • Salt and pepper

Instructions

  1. 1 Heat olive oil in an oven-safe skillet. Saute onion for 5 minutes until soft, add garlic and cook 1 minute.
  2. 2 Add crushed tomatoes, oregano, red pepper flakes, salt, and pepper. Simmer 10 minutes until sauce thickens.
  3. 3 Add ouzo and stir well. Nestle the shrimp into the sauce in a single layer.
  4. 4 Scatter crumbled feta over the top of the shrimp and sauce.
  5. 5 Bake at 200C for 12-15 minutes until shrimp are pink and cooked through and feta is softened and lightly golden.
  6. 6 Sprinkle with fresh parsley and serve immediately in the skillet with crusty bread for soaking up the sauce.
