Instructions

Heat olive oil in an oven-safe skillet. Saute onion for 5 minutes until soft, add garlic and cook 1 minute.

Add crushed tomatoes, oregano, red pepper flakes, salt, and pepper. Simmer 10 minutes until sauce thickens.

Add ouzo and stir well. Nestle the shrimp into the sauce in a single layer.

Scatter crumbled feta over the top of the shrimp and sauce.

Bake at 200C for 12-15 minutes until shrimp are pink and cooked through and feta is softened and lightly golden.

Sprinkle with fresh parsley and serve immediately in the skillet with crusty bread for soaking up the sauce.
