Plantain Pancakes

Sweet, spiced pancakes made from mashed overripe plantain mixed with flour, ginger, and chilli, pan-fried to crispy golden discs.

Ingredients

  • 4 very ripe plantains, mashed
  • 1/2 cup flour
  • 1 small onion, grated
  • 1 tsp ground ginger
  • 1 scotch bonnet pepper, minced
  • 1/2 tsp anise seeds, ground
  • Salt to taste
  • Vegetable oil for frying

Instructions

  1. 1 Mash ripe plantains until smooth in a bowl.
  2. 2 Add flour, grated onion, ginger, minced pepper, anise, and salt. Mix to a thick batter.
  3. 3 Heat oil in a frying pan over medium heat.
  4. 4 Drop spoonfuls of batter and flatten into pancake shapes.
  5. 5 Fry 2-3 minutes per side until golden brown and crispy.
  6. 6 Serve warm as a snack or alongside beans.
