4 very ripe plantains, mashed

1/2 cup flour

1 small onion, grated

1 tsp ground ginger

1 scotch bonnet pepper, minced

1/2 tsp anise seeds, ground

Vegetable oil for frying
Instructions

Mash ripe plantains until smooth in a bowl.

Add flour, grated onion, ginger, minced pepper, anise, and salt. Mix to a thick batter.

Heat oil in a frying pan over medium heat.

Drop spoonfuls of batter and flatten into pancake shapes.

Fry 2-3 minutes per side until golden brown and crispy.
