Ingredients

  • 4 ripe plantains (skin turning black)
  • 1 cup roasted groundnuts (peanuts)
  • Chilli powder to taste
  • Salt to taste

Instructions

  1. 1 Place whole unpeeled plantains on a charcoal grill.
  2. 2 Turn frequently until the skin is completely blackened and the inside is soft and caramelised, about 10-15 minutes.
  3. 3 Peel the plantain and serve on paper or a plate.
  4. 4 Accompany with a generous portion of roasted groundnuts.
