A velvety, rich soup made from ground roasted peanuts simmered with tomatoes, onions, and tender chicken in a deeply savoury broth.

Ingredients

  • 1 cup roasted groundnuts (peanuts), ground to paste
  • 1 whole chicken, cut into pieces
  • 4 large tomatoes, blended
  • 1 large onion, chopped
  • 2 tbsp tomato paste
  • 1 scotch bonnet pepper
  • 2 cloves garlic
  • 1 inch fresh ginger
  • Salt to taste
  • 4 cups water

Instructions

  1. 1 Season chicken with salt, garlic, and ginger. Boil until tender, about 30 minutes.
  2. 2 In a separate pot, cook blended tomatoes and onion until reduced, about 15 minutes.
  3. 3 Add groundnut paste and stir until smooth. Add tomato paste.
  4. 4 Add chicken and broth. Simmer on low heat for 20 minutes, stirring to prevent sticking.
  5. 5 Add scotch bonnet whole. Adjust salt and serve with fufu or rice balls.
