Tomato-Pepper Soup

A clear, fiery broth of blended tomatoes, onions, and scotch bonnet peppers with tender chicken or goat, lighter than stews but bold in flavour.

Ingredients

  • 1 whole chicken or 1kg goat meat, cut into pieces
  • 6 large tomatoes, blended
  • 2 large onions, blended
  • 3 scotch bonnet peppers
  • 1 inch fresh ginger
  • 4 cloves garlic
  • 2 bouillon cubes
  • Salt to taste
  • 1 tbsp tomato paste

Instructions

  1. 1 Season meat with salt, garlic, ginger, and bouillon. Boil until tender, about 30-40 minutes.
  2. 2 Add blended tomatoes and onion to the pot. Bring to a boil.
  3. 3 Add tomato paste and whole scotch bonnet peppers. Simmer 15 minutes.
  4. 4 The soup should be brothy and clear, not thick. Adjust seasoning.
  5. 5 Serve hot with fufu, rice balls, or banku.
