A vibrant, party-style fried rice loaded with mixed vegetables, shrimp, and chicken, seasoned with curry powder and served with a side of shito.
Ingredients

3 cups long-grain rice, parboiled

200g chicken breast, diced

150g shrimp, peeled

1 cup mixed vegetables (carrots, peas, green beans, corn)

1 large onion, diced

3 tbsp vegetable oil

2 tsp curry powder

1 tsp thyme

2 bouillon cubes

1 green bell pepper, diced

Soy sauce to taste

Cook rice until 70% done. Drain and spread to cool.

Season and stir-fry chicken until golden. Set aside. Do the same with shrimp.

Blanch vegetables briefly. Drain.

Heat oil in wok, sauté onion. Add cooled rice, curry, thyme, bouillon. Stir-fry 5 minutes on high.

Add chicken, shrimp, vegetables, and bell pepper. Toss well. Season with soy sauce.

Serve hot with shito on the side.
