Ghanaian-Style Fried Rice

A vibrant, party-style fried rice loaded with mixed vegetables, shrimp, and chicken, seasoned with curry powder and served with a side of shito.

Ingredients

  • 3 cups long-grain rice, parboiled
  • 200g chicken breast, diced
  • 150g shrimp, peeled
  • 1 cup mixed vegetables (carrots, peas, green beans, corn)
  • 1 large onion, diced
  • 3 tbsp vegetable oil
  • 2 tsp curry powder
  • 1 tsp thyme
  • 2 bouillon cubes
  • 1 green bell pepper, diced
  • Soy sauce to taste

Instructions

  1. 1 Cook rice until 70% done. Drain and spread to cool.
  2. 2 Season and stir-fry chicken until golden. Set aside. Do the same with shrimp.
  3. 3 Blanch vegetables briefly. Drain.
  4. 4 Heat oil in wok, sauté onion. Add cooled rice, curry, thyme, bouillon. Stir-fry 5 minutes on high.
  5. 5 Add chicken, shrimp, vegetables, and bell pepper. Toss well. Season with soy sauce.
  6. 6 Serve hot with shito on the side.
