A popular Gambian street breakfast of tapalapa bread stuffed with spiced black-eyed bean stew, onion sauce, and fiery pepper paste.

Ingredients

  • 4 pieces tapalapa bread
  • 2 cups cooked black-eyed beans
  • 1 large onion, diced
  • 2 tbsp vegetable oil
  • 1 tbsp tomato paste
  • 1 Scotch bonnet pepper, minced
  • 1 Maggi cube
  • Salt to taste
  • Pepper sauce for serving

Instructions

  1. 1 Heat oil in a saucepan. Saute onion until softened.
  2. 2 Add tomato paste and cook for two minutes.
  3. 3 Add cooked beans, Maggi cube, minced Scotch bonnet, and salt. Mash some beans for a thick consistency.
  4. 4 Simmer for ten minutes until flavors meld and the stew is thick.
  5. 5 Slice tapalapa bread lengthwise and fill generously with the bean stew.
  6. 6 Top with extra onion sauce and pepper paste. Serve immediately.
