A warm, creamy porridge made from ground roasted peanuts and millet couscous, sweetened with sugar and served as a hearty Gambian breakfast.

Ingredients

  • 1 cup roasted groundnuts, ground to paste
  • 2 cups millet couscous
  • 1 liter water
  • 3 tbsp sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • Warm milk for serving, optional

Instructions

  1. 1 Roast groundnuts until fragrant, then grind to a smooth paste.
  2. 2 Steam millet couscous until fluffy, about fifteen minutes.
  3. 3 Bring water to a boil in a saucepan. Stir in the groundnut paste until dissolved.
  4. 4 Add the steamed couscous to the groundnut liquid. Stir continuously to prevent lumps.
  5. 5 Add sugar, vanilla, and salt. Cook on low heat for five minutes until thick and creamy.
  6. 6 Serve warm in bowls. Drizzle with extra groundnut paste or warm milk if desired.
