Chicken or fish simmered in a thick, creamy groundnut sauce with tomatoes and chilli, delivering a rich, nutty comfort that epitomises Central African cooking.

Ingredients

  • 500g chicken pieces
  • 1 cup smooth peanut butter
  • 4 tomatoes, blended
  • 2 onions, diced
  • 3 cloves garlic, minced
  • 1 scotch bonnet pepper
  • 2 tbsp vegetable oil
  • 1 bouillon cube
  • Salt to taste
  • 2 cups water

Instructions

  1. 1 Season chicken with salt and garlic. Brown in oil and set aside.
  2. 2 Sauté onions until golden in the same pot.
  3. 3 Add blended tomatoes and cook 10 minutes.
  4. 4 Dissolve peanut butter in warm water and add to pot, stirring well.
  5. 5 Return chicken, add scotch bonnet and bouillon cube.
  6. 6 Simmer on low heat 30 minutes until sauce thickens and chicken is tender.
