Gabonese Hot Pepper Sauce

A fiery condiment of blended scotch bonnet peppers, tomatoes, onions, and citrus, served alongside almost every Gabonese dish.

Ingredients

  • 6 scotch bonnet peppers
  • 2 tomatoes
  • 1 small onion
  • 2 cloves garlic
  • Juice of 1 lime
  • 1 tbsp vegetable oil
  • Salt to taste

Instructions

  1. 1 Roast scotch bonnet peppers and tomatoes over an open flame or in a dry pan until charred.
  2. 2 Blend roasted peppers, tomatoes, onion, and garlic to desired consistency (chunky or smooth).
  3. 3 Heat oil in a small pot, add the blended mixture.
  4. 4 Cook 5 minutes, add lime juice and salt.
  5. 5 Cool and store in a jar. Keeps refrigerated for one week.
