A zingy, refreshing drink made from freshly grated ginger, sweetened with sugar and brightened with lime, served ice-cold.

Instructions

Blend ginger with 2 cups water until very smooth.

Strain through a fine sieve or cheesecloth, squeezing out all liquid.

Add remaining water, sugar, and lime juice. Stir until sugar dissolves.

Add blended pineapple juice if using for extra flavour.

Chill thoroughly and serve over ice.

The Story Behind Jus de Gingembre
Ginger beverages have been consumed in Gabon for generations, long before colonial contact. The rhizome grows well in equatorial Gabon, and fresh ginger juice became a universal household drink. Today it is served at celebrations, sold by street vendors, and made in every Gabonese kitchen.
