Ripe plantains boiled and mashed with palm oil, salt, and a hint of pepper into a smooth, golden comfort food eaten with stews or on its own.

Ingredients

  • 4 ripe plantains
  • 2 tbsp palm oil
  • Salt to taste
  • Pinch of ground chilli (optional)

Instructions

  1. 1 Peel plantains and cut into chunks.
  2. 2 Boil in salted water 15 minutes until very soft.
  3. 3 Drain and mash with a fork or masher until smooth.
  4. 4 Add palm oil and salt, mix thoroughly.
  5. 5 Add a pinch of ground chilli if desired. Serve warm.
