A golden braided Finnish sweet bread perfumed with cardamom, brushed with egg wash and topped with pearl sugar.

Mix flour, sugar, cardamom, yeast, and salt. Add warm milk, melted butter, and egg. Knead 10 min until smooth.

Cover and let rise 1 hour in a warm place until doubled.

Divide dough into 3 equal pieces. Roll each into a long rope. Braid the three ropes together.

Place braid on a baking sheet. Cover and let rise 30 min.

Brush with egg wash and sprinkle generously with pearl sugar.

Bake at 200°C for 20-25 min until deep golden. Cool on a rack.

The Story Behind Pulla
Pulla is the centerpiece of the Finnish kahvipöytä (coffee table), a tradition where guests are served coffee with an array of baked goods. Cardamom arrived in Finland via Swedish trade routes in the 18th century and became the defining spice of Finnish baking. A Finnish home without pulla is considered incomplete.
