Sautéed Reindeer

Tender shavings of reindeer meat sautéed with butter and served with mashed potatoes and lingonberries — Lapland's iconic dish.

Ingredients

  • 500g frozen reindeer meat, partially thawed and thinly shaved
  • 40g butter
  • 200ml water
  • Salt and black pepper
  • Lingonberry jam for serving
  • Mashed potatoes for serving
  • Pickled cucumber for serving

Instructions

  1. 1 Shave the partially frozen reindeer meat into thin strips using a sharp knife.
  2. 2 Melt butter in a large skillet over high heat. Add reindeer shavings in batches.
  3. 3 Sear without stirring for 2 min, then toss. Cook until browned, about 5 min total.
  4. 4 Add water, reduce heat, and simmer 10-15 min until meat is very tender and liquid has reduced.
  5. 5 Season with salt and pepper. Serve on mashed potatoes with lingonberry jam alongside.
