A custardy, golden-edged Finnish pancake baked in the oven until puffed and set, served with berry jam and whipped cream.

Ingredients

  • 3 eggs
  • 600ml whole milk
  • 150g all-purpose flour
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 40g butter for pan
  • Strawberry jam for serving
  • Whipped cream for serving

Instructions

  1. 1 Preheat oven to 225°C. Place butter in a large oven-safe baking dish and melt in the oven.
  2. 2 Whisk eggs, milk, flour, sugar, and salt into a smooth batter. Let rest 5 min.
  3. 3 Pour batter into the hot buttered pan. The batter should sizzle.
  4. 4 Bake 25-30 min until puffed, golden on top, and set in the center.
  5. 5 Cut into squares. Serve immediately with strawberry jam and whipped cream.
