Blueberry Pie

A buttery Finnish pie with a thin crust brimming with wild Nordic blueberries, lightly sweetened and fragrant with a hint of cardamom.

Ingredients

  • 150g butter, melted
  • 100g sugar
  • 1 egg
  • 200g all-purpose flour
  • 1 tsp baking powder
  • 500g fresh or frozen wild blueberries
  • 2 tbsp sugar for topping
  • 1/2 tsp ground cardamom

Instructions

  1. 1 Mix melted butter and sugar. Beat in egg. Stir in flour, baking powder, and cardamom until smooth.
  2. 2 Press dough into a buttered 24cm pie dish, pushing up the sides to form an even crust.
  3. 3 Spread blueberries evenly over the crust. Sprinkle with remaining sugar.
  4. 4 Bake at 200°C for 25-30 min until crust is golden and berries are bubbling.
  5. 5 Cool slightly and serve with vanilla sauce or whipped cream.
